Char Kway Teow may just edge Chicken Rice out as the nation's favourite dish. It's big on flavour and even bigger on calories. Not diet food, but if you want to get local, then this little spot is as local as it gets and is a great example of proper Singaporean hawker food. 'Kway Teow' refers to the flat rice noodles that's fried in pork lard with Chinese sausage, egg and cockles. A good Char Kway Teow will have a smokey flavour from the wok, the noodles will be moist and slightly greasy, and of course, there will be a long queue of people waiting for the 'uncle' behind the hawker stall to fry up a batch.
